Muesli breakfast tarts with fresh fruit and beetroot sprouts


For 8 servings
1 ripe banana
150 g muesli
3 tbsp maple syrup
Pinch of salt
8 muffin tins (silicone)

For the toppings

8 tbsp vegetable yog
8 small tufts of beetroot sprouts and/or broccoli sprouts
Fresh fruit of your choice


  1. Preheat the oven to 180 degrees. Mash the banana in a large bowl and mix with the granola, maple syrup and a pinch of salt.
  2. Divide the mixture between the muffin tins. Press down well and make a hollow in the centre, forming a tray. Bake for about 15 minutes until done.
  3. Let the breakfast tarts or granola cups cool well before filling them with vegetable yog, fresh fruit of your choice and a tuft of sprouts per tart.
