For 4 persons
4 slices of Christmas bread (preferably leftover)
100 ml vegetable milk
1 tbsp flour
1 tsp cinnamon
30 g unsalted vegetable butter for frying
For the toppings
30 g pea shoots
Optional: fruit such as orange, banana and/or cranberries
- Mix the vegetable milk with the flour and cinnamon in a deep dish. Roll the slices of Christmas cake through the mixture.
- Heat some vegetable butter in a frying pan and fry two slices until golden brown on both sides. Repeat this step for the rest of the slices.
- Serve the French toast with icing sugar, the sprouts and some fruit, if desired.
