Christmas bread rolls with pea asparagus sprouts


For 4 persons
4 slices of Christmas bread (preferably leftover)
100 ml vegetable milk
1 tbsp flour
1 tsp cinnamon
30 g unsalted vegetable butter for frying

For the toppings

30 g pea shoots
Icing sugar
Optional: fruit such as orange, banana and/or cranberries


  1. Mix the vegetable milk with the flour and cinnamon in a deep dish. Roll the slices of Christmas cake through the mixture.
  2. Heat some vegetable butter in a frying pan and fry two slices until golden brown on both sides. Repeat this step for the rest of the slices.
  3. Serve the French toast with icing sugar, the sprouts and some fruit, if desired.
