Wraps with cauliflower, apple, walnut and alfalfa

4 whole-wheat tortillas
1 green apple
1 avocado
100 g walnuts, toasted
4 tbsp curry hummus
1 cabbage lettuce
80 g alfalfa
Freshly ground pepper and salt

For the roasted cauliflower
400 g cauliflower, in small florets
2 tsp curry
1/2 tsp salt
2 tbsp olive oil

Preheat the oven to 200 degrees. Mix the cauliflower florets with the curry, salt and olive oil and spread on a baking tray lined with baking paper. Roast for 20 minutes, flipping halfway through. Dice the apple and avocado. Mix these in a bowl with the roasted cauliflower. Season with salt and pepper if necessary. Spread the curry hummus over the tortillas. Top with some cabbage lettuce leaves and the alfalfa. Spread the cauliflower mixture over the centre of the tortilla and fold into a burrito. Serve lukewarm or cold.
