Avocado mango tartlet with Greenpeez

Need a top starter for Christmas and want to have the culinary touch that is used in the top restaurants? We know the secret! Make sure you use sprouts for the topping of your dish.

Ingredients

for 4 persons

Handful of greenpeez
2 ripe avocados
2 balls of mozzarella
1 ripe mango

Dressing:

2 tablespoons lime soup
Pinch of salt & pepper
Pinch of chili flakes
3 tablespoons olive oil

Preparation:

Mix the dressing ingredients well. Cut the mango and mozzarella into small cubes. Halve the avocados, remove the stone and peel and also cut the flesh into small cubes (if necessary, sprinkle with a little lime or lemon juice to prevent discolouration). Place a cooking ring on a plate and divide about a quarter of the avocado into it, pressing gently.

Put mozzarella and mango on top and press down gently. Remove the cooking ring and put a handful of greenpeez on top. Repeat this 3 more times. Drizzle the vegetarian tartare of mango with some dressing.

Tip: Serve the mango and avocado tartare immediately or store up to 2 hours in the fridge.

The structure of Greenpeez is very similar to that of the pea shoot sprouts. The difference is in colour and taste; by exposing the sprouts to light for a longer period of time, they change colour. Greenpeez have the fresh, crispy taste of fresh mangetout and are full of fibre.

Suitable as a garnish and in salads.
