For 2 persons
4 slices of bread
2 slices of vegan 'cheese
30 g chickpea sprouts
1 can of vegan 'tuna'
2 tbsp vegan mayonnaise
1/2 red onion, chopped
2 tbsp fresh parsley, coarsely chopped
1 tsp sriracha
20 g vegetable butter
Freshly ground salt and pepper to taste
- Drain the vegan tuna if necessary. Mix in a bowl with the vegan mayonnaise, chopped red onion, parsley and sriracha (more or less as desired). Season with salt and pepper to taste.
- Spread one side of each slice of bread with vegetable butter and turn over. Divide the vegan tuna mixture, vegan cheese and chickpea sprouts between two of the slices. Press the other slices on top (with the buttered side on the outside).
Fry the tuna melt sandwiches until golden brown on both sides. Serve hot.
